Day 3: 30 Day Vegan Still on Break! 3/7

One of my favorite recipes is Fattoush ( Lebanese Bread Salad). One reason I love being vegetarian and trying out the vegan diet because there are so many interesting recipes to try. They are so healthy for you too. This dish is delicious especially if you are a salad lover.

You will need:
2 garlic cloves, mashed into a paste
2 teaspoons tahini (sesame paste)
1/3 cup fresh lemon juice
1/3 cup extra virgin olive oil
1/2 teaspoon salt
 Pinch of cayenne
2 large or 4 small white or whole wheat ( preferably) pita breads.
1 large cucumber, peeled, seeded, and chopped
1 large, ripe tomato, seeded and chopped
1/2 small green bell pepper, seeded and chopped
1/2 cup minced red onion
1 cup cooked or canned chickpeas, drained and rinsed
1/3 cup chopped fresh parsley leaves
1/3 cup chopped fresh mint leaves
2 cups shredded romaine lettuce

1. Preheat the oven to 350 degrees F. In a small bowl, whisk together the garlic, tahini, lemon juice, olive oil, salt, and cayenne until blended. Set aside.

2. Place the pitas on a baking sheet and bake until lightly toasted, turning once, 10 to 12 minutes. Cut or tear into bite sized pieces.Place these in large bowl.  Add the cucumber, tomato, bell pepper, chickpeas, parsley, mint, and as much of the dressing to coat it. Toss and let it sit. Then serve. Usually serves 4 people.


Very healthy especially if you get leaves that are green and do not use iceberg lettuce. Gives you the vitamins and veggies you need for your diet.

  2. May seem a little difficult at first, but well worth the effort. Be careful when cooking the pitas though, they tend to burn very easily depending on the type and power of your oven!

  3. You know, I think I could handle being vegan if I could eat yummy salads like this all the time. :p
    I'll have to use this recipe and try it for myself sometime, looks really delicious. :)

  4. Yes being vegan/vegetarian has definitely made me obsessed with salad for sure. There are so many recipe books just for things like this though. If you find the right resources it can be inexpensive and very beneficial. I like to buy in bulk which has saved me a lot of money. This recipe is very delicious though, you will love it :)!
