Dessert Post! Mango-Coconut Bread Pudding

Hey! So tried this on my last day of spring break and it was amazing if you like coconut anyways. It is pretty old-fashioned. This recipe serves 8!

Here is what you need...
1 large, ripe mango, peeled, pitted and pureed
1/2 cup drained soft silken tofu
2 1/2 cups unsweetened coconut milk
1/2 cup firmly packed light brown sugar or natural sweetener
1 teaspoon pure vanilla extract
8 to 10 slices white bread, crusts removed
1/4 cup unsweetened shredded coconut
1 large, ripe mango (optional), peeled, pitted, and diced, for garnish

  1. Preheat oven to 350°.
  2. To prepare bread pudding, combine first 6 ingredients in a large bowl. Stir in bread and mango. Let stand at room temperature 30 minutes. Pour mixture into an 11 x 7-inch baking dish coated with cooking spray. Bake at 350° for 1 hour. Sprinkle with coconut. Bake an additional 10 minutes or until set. Let stand 30 minutes before serving.
  3. To prepare sauce, combine sugar and nectar in a small saucepan. Bring to a boil. Reduce heat, and simmer 10 minutes. Remove from heat; stir in butter. Combine the cornstarch and evaporated milk in a small bowl. Add cornstarch mixture to nectar mixture. Bring to a boil over medium heat; cook 1 minute, stirring constantly. Serve warm over bread pudding.

So, since I am getting more activity on facebook and not necessarily my blog. I am going to ask some questions.

1. Do you think being vegan and vegetarian is too expensive now days and just not sensible?

2. Have you tried any of the recipes I have posted? Just Curious :)

  1. Was delicious! One of the best desserts I have ever had! Being vegan/vegetarian may seem a little more expensive but in the end the health results are completely worth it! Especially when you can eat delicious desserts like this one :) try it!

    1/2 cup sugar
    1/3 cup mango or apricot nectar
    1 tablespoon butter or stick margarine
    1 teaspoon cornstarch
    1 (5-ounce) can evaporated fat-free milk

    I guess I did not post that portion, but here it is. That was my fault.

    It is totally worth it and not that bad calorie wise AND SO DELICIOUS!

  4. I am finding that it is expensive to be vegetarian (at least in Muncie). I only come across this in the grocery store though...it's a lot cheaper to eat a vegetarian sandwich at a sandwich shop though!

    1. Yea I have learned to be a bargain shopper thanks to my family and experience. It is definitely hard at first and something to get used to. The benefits though I think outweigh everything. My family is german and have lots of heart issues and it just changed my whole health outcome. I would look at places that people haven't heard a whole lot about and there is online stuff that is cheap and in bulk! You just have to do some researching. It becomes a lot easier once you are fully committed.

  5. I can definitely see the health benefits for going vegetarian or vegan, but I know for a lot of people it isn't practical if you want a balanced diet. It does seem expensive and you really have to be dedicated. It would be really hard for me.

    1. Yeah I get that a lot. How are you vegetarian & still have money?!? My answer is pretty much what I said to Alli above. You have to know people and places. You have to be able to bargain and know what actually is vegetarian and what is not. Many time labels will say they are vegetarian and they are not. It is definitely a hard lifestyle change if you love meat. There are so many supplements though and vitamins too. Something as simple as taking a Flintstone Vitamin a day can really help with catching up with what you are lacking. I understand though and respect your opinion because you have to want to put the work into it to get a good deal and still be healthy.
